A lot of good idea here, really.
Thomas, what is the final goal of your project?
Starting producing a open source DC in a kit? Something like OSTC?
Going on kick starter?

Anyway I would be interested following the results of your work once it's
stable. Maybe I could be a future customer 😁

Regarding O2 monitoring, What kind of electronic should I put behind my O2
sensor to communicate with your computer?

Regarding pressure sensors IMHO current technology doesn't permit a optimal
integration yet. Despite of their communication protocol (Linus wrote a
nice post on this months ago), at least for tech dives they are really too
large. They are a PITA with multiple stages. So they are mostly confined on
back gas and one stage. on sidemount they are ok (one for side). But once
you have two stage bottles lying side by side their dimension starts to
create problem. Mostly it depends on your first stage model brand and HP
port position. Most of the time hoses get entangled, they do not permit a
sleek route of mech spg and they protude so much that a great attention
must be taken while moving them above/underwater.
I have a broken suunto pressure sensor and the scubapro is pretty much the
same: they have nearly the same dimension of my Scubapro MK11 latest model.
I could not imagine myself going in a cave or a wreck with a bulge
protruding my back gas 😨

Best
